Minestrone Soup – Four Servings
Ingredients:
- 1-8 oz package elbow macaroni
- 1 can pasta sauce
- 1 can red kidney beans undrained
- 1 can sliced carrots
- 1 can green beans
- 1 can diced tomatoes
- 1-2 bouillon cubes
- One medium onion diced
- 2 tablespoons of olive oil
Instructions:
- In a large pot, combine olive oil and onions. Partially cook onions for 8 minutes then add pasta sauce, diced tomatoes, green beans, kidney beans, carrots and bouillon cubes.
- Add 2 to 4 cups of water, depending on desired thickness. Season to taste with salt, pepper, garlic powder and onion powder.
- Bring to a boil and add pasta
- Simmer on low for 12-15 minutes, stirring occasionally, until pasta is tender.
*Note: For a heartier soup you can add: pinto beans undrained, black beans undrained, canned chicken undrained, ground turkey and/or ground beef. If you are using ground turkey or ground beef, please cook the meat with the carrots and onions.
