Chili Mac- Four Servings- 4 servings
Ingredients:
- 2 servings of elbow macaroni
- 1 pound browned and seasoned ground beef. Season with salt, pepper, garlic powder, onion powder to taste. (You can use ground chicken or ground turkey if you desire.)
- 1 can of chili or 1 can of tomato sauce
- 1 can of diced tomatoes (with green chiles if you like it spicy!)
- 1 small onion diced
- 2 tablespoons of olive oil
- 2 cups of milk
- 3 cups of water
- ¼ cup of cheddar cheese (or ¼ cup of Mexican Cheese mix)
Instructions:
In a large pot combine: olive oil, small onion, the chili/or tomato sauce, diced tomatoes, macaroni, 2 cups of milk, 3 cups of water and seasonings. Stir to combine
Bring to a boil, then cover and simmer on low for 12 minutes, stirring occasionally. Remove from heat and let sit uncovered for 5 minutes to thicken. Top with cheese and serve.
Note: Use seasoned ground beef and cheese if avoiding canned chili.
